Pumpkin Spice Bread

I made our favorite Pumpkin Spice Bread last night and now it's beginning to smell a lot like fall around here!
Paired with a cup of yummy amaretto coffee and it was the beginning of a wonderful night!
Want the recipe?

Pumpkin Spice Bread
1 3/4 cup flour
1 1/2 cup sugar
1 tsp. baking soda
1 tsp cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/8 tsp. ground cloves
1/2 cup margarine
1 cup canned pumpkin (8 oz.)
1 egg
1/3 cup water

Mix it all up, pour into a loaf pan, and bake for 1 hour and 10 minutes at 350 degrees. Then enjoy the pumpkin goodness!

Speaking of recipes, I recently reorganized all of my recipes while I was in the hospital. Sooo glad I did, because that's definitely not something I could do now that life is a little more hectic with two babies.
I used plastic sheet protectors so I could pull out the recipe I'm working on and it would be splatter proof. There are 10 dividers:

What do you love baking for fall? I'm thinking homemade applesauce next?!

  1. I started organizing my recipes months ago but gave up. I LOVE what you decided to do. I need to get those recipes organized before Christmas.

  2. Your cookbook is lovely, and your pumpkin bread looks delicious! Mmmm...my favorite autumn baked goodies are gingersnaps (undercooked by a couple of minutes so they're more like ginger softs) and apple butter!

  5. That pumpkin bread looks amazing! And I love your recipe binder. I totally need to do that- I have little scraps of paper with recipes written down floating around drawers, printouts stuck to the fridge, cooking magazines all over the place and I can never find which particular recipe I'm looking for! I need to do what you did! Thanks for the inspiration :)

  6. Ooh, I think I have all those ingredients. My thesis work (which will be done in December, so I'll be able to return to craft-land with you then - YAY!) will keep me from making it tonight, but I might be able to use your pictures to convince Lee to bake it tonight. :)
